Our Portuguese chef, who has trained in various parts of Japan, uses ingredients from the Kyoto and Tango areas to serve an omakase course meal based on Japanese cuisine, incorporating the various cooking methods he has cultivated over the years and his own identity.

Our sushi is made with koshihikari rice grown without pesticides or chemical fertilizers by Iio-jozo (Miyazu City), which is famous for its Fuji vinegar, and Fuji vinegar made from the same carefully selected rice. Seafood raised in the nutrient-rich seas nearby completes our sushi. Please enjoy.
